Our Narrow Escape from New York City

Our Gotcha Day - 5th Anniversary

It's our Gotcha Day! 

 We are celebrating our 5th "Gotcha Day" with Cat on My Head's Sunday Blog our Fifth Year with Carol in Connecticut.  We almost didn't make it out of New York City though...

Our story: We were "peaches & Tigger"in the old days & we had a narrow escape in NYC before moving to Connecticut. We were even on  "death row"for a while. Our previous owners surrendered us to a shelter in NYC when they moved to Puerto Rico.I guess they thought we'd be adopted right away since we had such beautiful calico colorings with gorgeous stripes.

But NO ONE came to get us and day after day went by. We were besides ourselves with grief and terror. Finally the shelter put out a notice we were now on "death row" - a place for cats no one comes to adopt!  We were due to be put to sleep the next day!

The good part of the story starts now.  100's of loving volunteer watch the "death row" item in Facebook. They share our stories, post loving words & make donations. We were lucky and captured the hearts of many.

After a couple of days we were "pulled" (SAVED) by a wonderful foster organization in Staten Island. I and Paprika had caught sniffles in the shelter and this wonderful foster lady named Joann nursed us back to health and brought us to Connecticut.

For 6 more months we stayed in a large white house with 50 other cats while
awaiting forever homes. I was in charge of captivating visitors. Of course I did antics daily while awaiting forever homes. I was in charge of captivating visitors. Of course I did antics in a sunny window where I could attract visitors and pick the best! MOL.

Then we met Carol. She had fallen in love with me after seeing my picture on the internet.  And then she came to meet me and my sisfur Paprika in that white house. Of course I could not leave without Paprika. So Carol took both of us home.

Of course, being the lovable furries we are, Carol loves us both and we're awaiting our 5th Christmas here.  We have taken over the house, believe me!  We set the rules, although we still haven't come to an agreement on the quantity of tuna being served here~

Snow Princesses

Snow has finally arrived here in Connecticut.  This calls for a winter celebration.  I've always thought of myself as a  "Princess." Haughty, Icy, I've got it all!

Decorating Day - Part 2

Decorating involves  tough decisions.  But we have to start somewhere.  Since we  received many compliments on our 2-some holiday picture, we felt it should be prominently displayed near the tree!

After a lot of work, we left the room and took a nap in our usual place only to wake up inside THIS!!!  Mrowww! 

The only thing to do was  take ANOTHER nap! Hopefully when we awake we are freed & can go eat!

Wow, how did I get so lucky?    I see here our dinner is made from wholesome ingredients and without the use of corn. And that each flavor delivers to me the perfect amount of energy.  
AND (Paprika should like this): "With so many foods to choose from there's something for even the pickiest of palates."

Making a Paprika-Peach Pie

 Notice how we immerse ourselves in our work?  
We just must start the day before Thanksgiving with a pie recipe for which we may have been named! (It's too bad Paprika's name must come first but my hands, er, paws are tied! You will find the link & recipe below! Are you hungry yet? - Peaches the cat


Paprika Peach Pie Recipe

         For the crust
         2 1/2 cups flour
         1 tbs. sugar
         1 tsp. salt
         2 sticks (1 cup) butter, very cold
         1/2 cup ice water
         For the pie filling
         6 peaches, sliced (about 5 cups)
         2 tbs. lemon juice
         1/3 -2/3 cups sugar (to taste)
         1/4 cup brown sugar
         3 tbs. potato starch
         1 tbs. sweet paprika
         1/3 tsp. white pepper
         1/4 tsp. allspice
         1/4 tsp. ginger
         1/4 tsp. salt
         2-3 dashes Angostura bitters
         1 tbs. cream

         turbinado sugar, for dusting

1  Make the pie dough: Whisk together the flour, sugar, and salt. Using a pastry cutter, cut in the cold butter until just blended. Add the ice water, and then fold the ingredients together with a spatula until they're just moistened. Be sure not to overwork the dough. Divide the dough in half, and form each half into a disc. Wrap the discs tightly with plastic wrap, and refrigerate for at least an hour but up to two days.
To make the pie: Take out a disc of the dough and roll it out in a circle to fit the pie pan. (I always roll out the dough between two sheets of wax paper because it's easier to transfer from the counter to the pan). Lightly press the 1  dough in the bottom of the pie pan, and then refrigerate the pan and the crust.

2  Peel and slice the peaches. Toss them with the lemon juice, 1/3 cup of sugar, brown sugar, potato starch, sweet paprika, pepper, allspice, ginger, and salt. If you think the filling needs to be sweeter, add additional sugar. Add the ingredients to the pie pan, and then return the pie to the refrigerator.
3  Roll out the second disc of dough to make the top crust. Lay the crust across the pan and crimp the edges. Return the pie to the refrigerator for 15-20 minutes, or until the crust is cold.
Preheat the oven to 425. Brush the top of the pie with the cream, and then sprinkle with the turbinado sugar. Bake at 425 for 20 minutes, and then lower the heat to 375. Continue baking for an additional 30-35 minutes, or until the top is golden and the filling is bubbling. Enjoy!
